Oyster Mushroom Calamari
4 large king oyster mushrooms
2 tbsp olive oil
1 tsp lemon juice (freshly opened)
3 tbsp water
1 cup (128 g) breadcrumbs
2 tbsp flax meal (ground)
1 1/2 tbsp yeast
1 tsp smoked paprika
1/2 tsp onion powder
sea salt (to taste)
- Clean the mushrooms. Slice them crosswise. Cut a hole into the center of the slices turning it into a ring shape.
- In a mixing bowl, pour in the lemon juice and olive oil. Sprinkle salt.
- Mix until the ingredients are well-combined. Adjust seasoning, if necessary, to achieve desired taste.
- Toss in the mushroom rings. Make sure each ring is coated well. Leave to marinade for 30 minutes.
- Set the oven to 400 °F (200 °C).
- While preheating the oven, take a mixing bowl and add in the ground flax meal. Pour water and mix. Keep it still for 5 minutes or until the mixture becomes sticky.
- Using a separate bowl, mix the yeast, paprika and onion powder. Add in the breadcrumbs. Sprinkle salt to taste.
- Dip each ring into the flax mixture. Then, coat it with the breadcrumb mixture.
- Brush a baking sheet with olive oil. Place each ring on the sheet.
- Bake the rings into the oven for 15 minutes. Wait until the rings are crispy. Flip the rings and bake the other side for 5 more minutes.
- Best served with tartar sauce.
