Oyster Mushroom Calamari

Ingredients

  • 4 large king oyster mushrooms

  • 2 tbsp olive oil

  • 1 tsp lemon juice (freshly opened)

  • 3 tbsp water

  • 1 cup (128 g) breadcrumbs

  • 2 tbsp flax meal (ground)

  • 1 1/2 tbsp yeast

  • 1 tsp smoked paprika

  • 1/2 tsp onion powder

  • sea salt (to taste)

Directions

  • Clean the mushrooms. Slice them crosswise. Cut a hole into the center of the slices turning it into a ring shape.
  • In a mixing bowl, pour in the lemon juice and olive oil. Sprinkle salt.
  • Mix until the ingredients are well-combined. Adjust seasoning, if necessary, to achieve desired taste.
  • Toss in the mushroom rings. Make sure each ring is coated well. Leave to marinade for 30 minutes.
  • Set the oven to 400 °F (200 °C).
  • While preheating the oven, take a mixing bowl and add in the ground flax meal. Pour water and mix. Keep it still for 5 minutes or until the mixture becomes sticky.
  • Using a separate bowl, mix the yeast, paprika and onion powder. Add in the breadcrumbs. Sprinkle salt to taste.
  • Dip each ring into the flax mixture. Then, coat it with the breadcrumb mixture.
  • Brush a baking sheet with olive oil. Place each ring on the sheet.
  • Bake the rings into the oven for 15 minutes. Wait until the rings are crispy. Flip the rings and bake the other side for 5 more minutes.
  • Best served with tartar sauce.
