Mushroom Crepes
Ingredients
12 (6 in) crepes
3 tbsp extra virgin olive oil
1 1/4 lb (approx 560 g) mushrooms (rinsed, trimmed, and sliced)
1/4 cup (32 g) flat-leaf parsley, chopped
1 tbsp thyme leaves
1 garlic clove, chopped
salt and pepper
1 package 10 oz (250 g) spinach, washed, stemmed, and chopped
5 oz (125 g) goat cheese, crumbled
2 cups (250 g) mozzarella cheese, shredded
Directions
- To start, preheat your oven to 350 F (180 C).
- Heat the oil in a pan over medium heat. Saute the mushroom with a pinch of salt for 11 min.
- Then you can stir in the parsley, thyme, garlic, and season it with salt and pepper. Allow it to cook for 2 min.
- After 2 min, lower the heat and add the spinach. Cover and allow it to cook for 3 min.
- You can now add in the goat cheese, and mozzarella cheese until it melts to make the filling.
- To prepare the crepe, lay it on a chopping board. Put some of the filling and roll it.
- Just repeat the process with the remaining crepes.
- Place them in a greased casserole dish and cover it with foil. Cook them in the oven for 16 min.
- Best served warm with sour cream.
