Mushroom Miso Soup

  • 1/2 pint (approx 235 ml) water

  • 2 shiitake mushrooms, sliced

  • 1 scallion , white part sliced

  • 1 tbsp miso

  • 1 oz (25 g) firm tofu, diced


  • To start, get a saucepan and place it over medium heat, and heat the water until it boils.
  • Stir in the miso with mushrooms. Lower the heat and allow them to cook for 6 min.
  • Pour the soup immediately into the serving bowls and top with diced tofu and scallions.
  • Best served hot.
