Mushroom Miso Soup
1/2 pint (approx 235 ml) water
2 shiitake mushrooms, sliced
1 scallion , white part sliced
1 tbsp miso
1 oz (25 g) firm tofu, diced
- To start, get a saucepan and place it over medium heat, and heat the water until it boils.
- Stir in the miso with mushrooms. Lower the heat and allow them to cook for 6 min.
- Pour the soup immediately into the serving bowls and top with diced tofu and scallions.
