Alfredo Pasta with Portobello
Ingredients
12 oz (300 g) penne pasta
1/4 cup (32 g) butter
2 tbsp extra-virgin olive oil
1 onion, diced
2 cloves garlic, diced
1 red bell pepper, diced
1/2 lb (225 g) portobello mushrooms, diced
1 lb (450 g) medium shrimp, peeled and de-veined
1 jar 15 oz (375 g) Alfredo sauce
1/2 cup (64 g) grated Romano cheese
1/2 cup (120 ml) cream
1 tsp cayenne pepper, or more to taste
salt and pepper to taste
1/4 cup (32 g) diced parsley
Directions
- To start, cook the pasta for 12 min in boiling salted water. Drain and set aside.
- Heat olive oil and butter, saute onions for 3 min, then stir in mushroom, garlic, and bell pepper. Stir fry for 3 more min.
- Add the shrimp to the mixture and cook until pink in color. Stir in Alfredo sauce, cream, Romano, pepper, salt, and cayenne. Allow to simmer or slightly boil for 7 min.
- Toss the pasta with the sauce, and top it with some parsley before serving.
