Baked Mushroom Rice


  • 14 1/2 oz (428 ml) chicken broth

  • 1 cup (128 g) sliced fresh mushrooms

  • 1 cup (128 g) uncooked long grain rice

  • 1/2 cup (64 g) chopped celery

  • 1/2 cup (64 g) chopped onion

  • 1/3 cup (80 ml) water

  • 1/4 cup (32 g) butter

  • 2 tbsp soy sauce

  • 1 tbsp parsley flakes


  • Pre-heat oven to 350 F (176 C).
  • Stir the butter and rice in a pan over medium heat. Cook for 3 minutes.
  • Add in the onion and celery. Cook for 3 minutes.
  • Stir in the mushrooms and cook for another 5 minutes.
  • Transfer the mixture into a greased casserole dish.
  • Add in the broth and parsley, soy sauce, water, and a pinch of salt and pepper. Mix well.
  • Cook in the oven for 45 to 50 minutes.
  • Serve hot.
