Baked Mushroom Rice
Ingredients
14 1/2 oz (428 ml) chicken broth
1 cup (128 g) sliced fresh mushrooms
1 cup (128 g) uncooked long grain rice
1/2 cup (64 g) chopped celery
1/2 cup (64 g) chopped onion
1/3 cup (80 ml) water
1/4 cup (32 g) butter
2 tbsp soy sauce
1 tbsp parsley flakes
Directions
- Pre-heat oven to 350 F (176 C).
- Stir the butter and rice in a pan over medium heat. Cook for 3 minutes.
- Add in the onion and celery. Cook for 3 minutes.
- Stir in the mushrooms and cook for another 5 minutes.
- Transfer the mixture into a greased casserole dish.
- Add in the broth and parsley, soy sauce, water, and a pinch of salt and pepper. Mix well.
- Cook in the oven for 45 to 50 minutes.
- Serve hot.
