Beany Mushroom Stir Fry
2 tbsp olive oil
1 tbsp diced fresh oregano
1 tbsp diced fresh basil
1 clove garlic, crushed
ground black pepper to taste
1 can 15 oz (375 g) garbanzo beans, drained and rinsed
1 large zucchini, halved and sliced
1/2 cup (64 g) sliced mushrooms
1 tbsp diced fresh cilantro
1 tomato, diced
- To start, heat the pan. Add some oil, and saute basil, pepper, oregano, and garlic.
- Stir in zucchini and garbanzo beans. Cover and allow to cook for 12 min. Stir the mixture every 4 min.
- Add the cilantro and mushrooms, and allow them to cook until they become soft.
- Now you can stir in the tomatoes. Mix well, then cover, and allow to cook for 1 to 2 min.
- Serve warm. Enjoy!
