Cheesy Portobello Stir Fry

  • 3 tbsp olive oil

  • 1 1/2 tbsp garlic flavored olive oil

  • 1/4 onion, cut into chunks

  • 2 portobello mushroom caps, sliced

  • salt and black pepper to taste

  • freshly grated Parmesan cheese

  • freshly grated Asiago cheese


  • To start, heat 1 1/2 tbsp of regular, or garlic flavored olive oil and stir fry mushrooms and onion. Let it cook until onions are tender and a bit dark around the edges.
  • Turn off the heat and top the mushrooms with the rest of the olive oil. Season with salt and pepper.
  • Sprinkle with Parmesan and Asiago cheese.
  • Best served with rice. Enjoy!
