Time to get cheesy!
First things first, the Portobello mushrooms are key, as you will be using them for added flavor. Yet, they are also high in vitamins and minerals, including fiber that reduces cholesterol and more.
You can use other types of mushrooms, like white or shiitake. Other good alternatives are bell peppers, green beans, bok choy, and broccoli.
The onions add crunch, but they also add complex fiber to your meal. You can use red onions, shallots, chives, or leeks as well. If you dislike the flavor or aroma, use other vegetables like a fennel bulb, celery, or asparagus.
Now you are truly ready for the secret behind this flavorful dish: the cheese. Parmesan is a very healthy cheese, as it is low in fat and high in calcium and protein. Asiago, on the other hand, has been aged longer than most cheese, so it is good for those with lactose intolerance.
If you don’t have these types of cheese, consider using other options, like mozzarella, Colby Jack, and medium cheddar. These choices are high in protein and add to your daily calcium needs. Remember that everything in moderation can be good, so consuming cheese every so often isn’t a bad thing.
That truly is all you need, but you can add more vegetables, like bell pepper, green beans, carrots, and water chestnuts. Feel free to also add a sauce, like a teriyaki, soy, or hoisin. Or make this dish homier with gravy on top.
Enjoy your cheesy mushroom stir-fry over rice, on its own, or as a side dish. This will soon become a family favorite, and you won’t even miss meat anymore.
