Cheesy Portobello Mushroom Lasagna

Ingredients

  • 9 to 10 lasagna noodles. uncooked

  • 1 can (14 oz or 350 g) diced tomatoes with juice, undrained

  • 1 can (8 oz or 200 g) tomato sauce

  • 1 can (6 oz or 150 g) tomato paste

  • 1 tbsp balsamic vinegar

  • 1 tbsp dried basil

  • 1 tsp dried oregano

  • 1/2 – 1 tsp garlic powder

  • salt and pepper

  • 2 cups (256 g) mozzarella cheese, divided

  • 1 cup (128 g) feta cheese, crumbled

  • 1 package (10 oz or 250 g) frozen chopped spinach, thawed and squeezed dry

  • 1 egg, slightly beaten

  • 1/2- 1 lb (225 – 450 g) portabella mushrooms, sliced

Directions

  • To start, preheat the oven to 350 °F (or approx. 175 °C) . Then grease the casserole dish.
  • Follow the instruction on the package for preparing the noodles.
  • Combine in the tomatoes (with juice), tomato sauce, tomato paste, vinegar, and seasonings in a saucepan over medium heat.
  • Let it boil. Cover and lower the heat. And allow them to cook for 22 to 26 min.
  • On a greased pan, pour in 1/3 of the sauce and spread it evenly.
  • Top and cover it with 3 noodle sheets. Followed by 1/2 of the cheese mix, 1/2 of the mushroom slices, and 1/3 of the tomato sauce, and spread evenly.
  • Just repeat the process to make another layer, and end it with noodles and tomato sauce on top.
  • Dredge or sprinkle the mozzarella cheese on top. Cover the dish with a loose sheet of foil.
  • Cook the lasagna in the oven for 26 min.
  • After 26 min, remove the foil and cook it for another 5 min.
  • Serve it warm, enjoy.
