Cheesy Portobello Mushroom Lasagna That Is Good for You [Recipe]

In fact, the amount of selenium and vitamin D are unique to this vegetable, which is why you should consume them to protect your body against reactive oxygen species (ROS) and other free radicals that can induce cell damage.

Other important antioxidant factors in mushrooms include polysaccharides, tocopherols, phenolics, carotenoids, ergosterol and ascorbic acid. Some of these are complex carbohydrates, previtamin A compounds, and vitamin C compounds.

However, adding mushrooms to your lasagna makes it a much more nutritious meal, high in dietary fiber, and high in antioxidants to strengthen your body.

What else is good about this mushroom lasagna?

This is a good question; we’re not just talking mushrooms here, though they certainly make a difference. For one, this lasagna is high in tomatoes, tomato sauce, and tomato paste.

Tomatoes are a good source of vitamin A, potassium, iron, and a pigment called lycopene, which has been proven to neutralize free radicals. They also promote digestion and lower the risk of colon, stomach, breast, lung, and endometrial cancer.

These three herbs can truly make a difference if your body is fighting inflammation. For one, basil is high in vitamin A, vitamin K, calcium, iron, and manganese, which give it antioxidant, immune-boosting properties.

In addition, oregano is considered antibacterial, and a great source of iron, vitamin K, manganese, vitamin E, tryptophan, and calcium. Spinach is a great source of vitamin K, promoting blood flow.

Cheesy Portobello Mushroom Lasagna

  • 9 to 10 lasagna noodles. uncooked

  • 1 can (14 oz or 350 g) diced tomatoes with juice, undrained

  • 1 can (8 oz or 200 g) tomato sauce

  • 1 can (6 oz or 150 g) tomato paste

  • 1 tbsp balsamic vinegar

  • 1 tbsp dried basil

  • 1 tsp dried oregano

  • 1/2 – 1 tsp garlic powder

  • salt and pepper

  • 2 cups (256 g) mozzarella cheese, divided

  • 1 cup (128 g) feta cheese, crumbled

  • 1 package (10 oz or 250 g) frozen chopped spinach, thawed and squeezed dry

  • 1 egg, slightly beaten

  • 1/2- 1 lb (225 – 450 g) portabella mushrooms, sliced


  • To start, preheat the oven to 350 °F (or approx. 175 °C) . Then grease the casserole dish.
  • Follow the instruction on the package for preparing the noodles.
  • Combine in the tomatoes (with juice), tomato sauce, tomato paste, vinegar, and seasonings in a saucepan over medium heat.
  • Let it boil. Cover and lower the heat. And allow them to cook for 22 to 26 min.
  • On a greased pan, pour in 1/3 of the sauce and spread it evenly.
  • Top and cover it with 3 noodle sheets. Followed by 1/2 of the cheese mix, 1/2 of the mushroom slices, and 1/3 of the tomato sauce, and spread evenly.
  • Just repeat the process to make another layer, and end it with noodles and tomato sauce on top.
  • Dredge or sprinkle the mozzarella cheese on top. Cover the dish with a loose sheet of foil.
  • Cook the lasagna in the oven for 26 min.
  • After 26 min, remove the foil and cook it for another 5 min.
  • Serve it warm, enjoy.
