This Fried Plantain With Mushrooms Is A Whole New Experience!

For this meal, you will need coconut oil for frying, 10 plantains, a cup of mushrooms, peanut butter, and onions. If you need to change some ingredients, try using vegetable oil, big white mushrooms or portobello, and spinach. You can also add extra vegetables to create a more filling dish!
Before you do anything else, soak the mushrooms in cold water. Start peeling the plantains and then slice them lengthwise into two equal-sized pieces.
Boil the plantains and mushrooms in different pans. Once the mushroom is tender, remove them and drain any excess water. Heat the oil in a pan over medium heat and fry the plantains until they are golden brown. Set them aside once done.
By this time, the mushrooms should have sufficiently boiled. Remove any excess water and fry until they are also golden brown. Add in the onions and fry for another 3 minutes. Season the mixture with some salt until you reach the desired taste.
Add in a teaspoon of peanut butter, a cup of water, simmer for 15 minutes, and voila!

Ingredients
10 pcs plantain
1 cup (128 g) mushrooms, soaked in cold water
1 onion
coconut oil
salt
1 tsp peanut butter
Directions
- Bring mushrooms and plantains to boil in different pans.
- Remove the plantains as soon as they’re tender. Make sure to drain any excess water.
- Heat oil in a frying pan and fry the plantains until golden brown. Set aside.
- The mushrooms by now would have boiled enough. Drain any excess water and fry.
- Stir in the onions. Fry until golden brown.
- Season with salt.
- Add in a teaspoon of peanut butter.
- Add 1 cup (240 ml) of water.
- Simmer for 15 minutes.
- Serve hot.
