Gnocchi with Mushrooms
Ingredients
2 tbsp olive oil
3 cloves garlic, diced
1/2 cup (64 g) diced red onion
salt to taste
6 cremini mushrooms, diced
4 small mixed sweet pepper, julienned
1/2 cup (64 g) cherry tomatoes, halved
4 leaves fresh basil, diced
1/2 cup (120 ml) balsamic vinegar
1 package 16 oz (400 g) potato gnocchi
1 cup (128 g) additional butter or margarine
Directions
- To start, cook the gnocchi according to package instructions.
- Heat olive oil in a pan and saute garlic for 2 min. Season with salt and add in the onions.
- Allow the onions to cook for 6 min or until tender.
- Stir in the basil, mushrooms, tomatoes, and peppers. Cook for another 5 min.
- Add the butter, allow to melt before adding the vinegar.
- Allow the mixture to boil. Lower the heat, and simmer for 22 min.
- Add the gnocchi and toss everything.
- Serve warm.
