Black Trumpet Souffle

  • 1/4 cup (32 g) butter

  • 3-5 oz (75-125 g) black trumpet mushrooms

  • 3-5 oz (75-125 g) cremini mushrooms

  • 1/2 cup (64 g) flour

  • 1 1/4 cups (300 ml) milk

  • 1/2 to 3/4 cup (64 to 96 g) Swiss cheese

  • 3 eggs

  • salt and pepper


  • Heat the butter in a pan and saute the mushrooms for a few mins.
  • Then stir in the flour and cook for 2 min.
  • Remove from the heat and slowly stir in the milk.
  • Return the mixture to the heat and add cheese, salt, and pepper.
  • Beat the egg yolks in a bowl. Then get a separate bowl and whisk the egg whites until stiff.
  • Gently fold the eggs into the mushrooms. Pour into souffle dish.
  • Put it into the oven and bake for 30 to 40 min or until the mixture has firmed up.
  • Best served warm, enjoy.
