Black Trumpet Souffle
Ingredients
1/4 cup (32 g) butter
3-5 oz (75-125 g) black trumpet mushrooms
3-5 oz (75-125 g) cremini mushrooms
1/2 cup (64 g) flour
1 1/4 cups (300 ml) milk
1/2 to 3/4 cup (64 to 96 g) Swiss cheese
3 eggs
salt and pepper
Directions
- Heat the butter in a pan and saute the mushrooms for a few mins.
- Then stir in the flour and cook for 2 min.
- Remove from the heat and slowly stir in the milk.
- Return the mixture to the heat and add cheese, salt, and pepper.
- Beat the egg yolks in a bowl. Then get a separate bowl and whisk the egg whites until stiff.
- Gently fold the eggs into the mushrooms. Pour into souffle dish.
- Put it into the oven and bake for 30 to 40 min or until the mixture has firmed up.
- Best served warm, enjoy.
