Duo Mushroom Linguine
4 oz (100 g) black trumpet mushrooms, sliced
8 oz (200 g) crimini mushrooms, sliced
1 clove garlic, minced
1/2 cup (120 ml) dry or cooking (white) wine
2 eggs or egg substitute
1/3 cup (approx 40 g) heavy cream
salt and pepper
- To start, heat some butter in a pan.
- Then, saute cremini mushrooms for 2 min.
- Next, stir in the black trumpet mushroom and garlic and cook for another 2 min.
- Add wine and allow to cook until the mixture reduces by at least half.
- In a bowl, whip the eggs and cream and add it to the mushroom mixture. Season with salt and pepper.
