Creamy Mushroom Spinach with Rotini Noodles

Ingredients

  • 12 oz (300 g) Rotini noodles

  • 1 tbsp olive oil

  • 3 cloves of garlic, minced

  • 1 cup (128 g) onion, chopped

  • 1 tbsp thyme

  • 4 cups (512 g) mixed mushrooms, sliced

  • 2 tbsp all-purpose flour

  • 1 cup (240 ml) milk

  • 2 cups (256 g) spinach, rinse well and chopped

  • 1/2 cup (64 g) basil, chopped

  • 1 tsp salt

  • ground pepper

  • grated Parmesan cheese

Directions

  • Heat the oil in a skillet over medium heat, and saute the onion, garlic, and thyme for 2 min.
  • Add the mushrooms and allow them to cook for 7 to 9 min.
  • Stir in the flour and mix for 1 min, gradually adding the milk.
  • Bring it to the boil. Allow to cook for 3 min and stir continuously until it thickens.
  • Stir in the spinach with basil and season with a pinch of salt and pepper. Cook for another 4 min.
  • You can serve your creamy mushroom and spinach with rotini noodles.
  • Enjoy while it is warm!
