When you add mushrooms to your meal, you are adding a reliable source of nutrients. These are otherwise hard to get.

For example, riboflavin, folate, and niacin are vitamins that are hard to consume if not in animal sources or grains. However, mushrooms can give you a good daily amount.

Also, the phenolic compounds in mushrooms known as sterols and triterpenes, are antiviral, anti-tumor, antioxidant, and keep blood sugar levels balanced.

Now, let’s talk about the rest of the vegetables

To start, the spinach in this recipe is a great source of vitamin K. Plus it also contains magnesium, potassium, and vitamins B6, B9, and E.

Spinach is also full of phytochemicals. These, like mushrooms, reduce the activity of free radicals, reduce inflammation, and help manage blood sugar.

In addition, the onion and garlic in this recipe are good ways to obtain prebiotics, promoting a healthy bowel.

These two foods also contain anti-inflammatory properties, but they also reduce blood pressure, blood cholesterol, and blood sugar.

Finally, the basil is high in polyphenols, which help manage blood sugar and keep the body safe from disease.

The thyme, by the way, is high in thymol, a compound thought to be antimicrobial and antiviral, adding a special touch to this mushroom spinach noodles dish.
