Black Trumpet Grits
Ingredients
1 1/2 cups (360 ml) milk
salt
3/4 cups (96 g) grits, not instant
4 oz (100 g) fresh black trumpet mushrooms, washed and squeezed dry, chopped
4 tbsp butter
2 cloves garlic, minced
4 oz (100 g) taleggio, rind removed and cut into chunks
dash red hot pepper sauce
black pepper to taste
Directions
- In a large heavy saucepan, pour in the milk and 2 cups of water, and season it with salt. Allow it to boil while stirring constantly.
- Slowly stir in the grits. Lower the heat and allow it to simmer.
- Stir constantly until grits thicken.
- Season with hot sauce and pepper, and mix in the taleggio cheese.
- To prepare the mushroom, get a medium pan and melt the butter over medium-high heat.
- Stir in the garlic and cook for 1 to 2 min.
- Then add the mushrooms. Allow to cook for 10 min.
- Stir in the mushroom mixture into the cooked grits. Add more salt if desired.
