Black Trumpet Grits

  • 1 1/2 cups (360 ml) milk

  • salt

  • 3/4 cups (96 g) grits, not instant

  • 4 oz (100 g) fresh black trumpet mushrooms, washed and squeezed dry, chopped

  • 4 tbsp butter

  • 2 cloves garlic, minced

  • 4 oz (100 g) taleggio, rind removed and cut into chunks

  • dash red hot pepper sauce

  • black pepper to taste


  • In a large heavy saucepan, pour in the milk and 2 cups of water, and season it with salt. Allow it to boil while stirring constantly.
  • Slowly stir in the grits. Lower the heat and allow it to simmer.
  • Stir constantly until grits thicken.
  • Season with hot sauce and pepper, and mix in the taleggio cheese.
  • To prepare the mushroom, get a medium pan and melt the butter over medium-high heat.
  • Stir in the garlic and cook for 1 to 2 min.
  • Then add the mushrooms. Allow to cook for 10 min.
  • Stir in the mushroom mixture into the cooked grits. Add more salt if desired.
  • Serve warm, enjoy.
