Marinated mushrooms for Antipasto
1 lb (450 g) mushrooms
1/2 cup (120 ml) olive oil
1/2 cup (120 ml) water
2 tbsp lemon juice
3 cloves garlic
1 tbsp red wine vinegar
1 tsp herbs (oregano, basil, etc)
salt to taste, vinegar, and herbs.
- To start, clean the mushrooms using a damp cloth. Remove the stems and cut mushrooms into medium-sized pieces.
- In a container, combine mushrooms with olive oil, water, lemon juice, vinegar, and herbs. Marinade for at least 1 hour or overnight for best results.
