Marinated mushrooms for Antipasto

Ingredients

  • 1 lb (450 g) mushrooms

  • 1/2 cup (120 ml) olive oil

  • 1/2 cup (120 ml) water

  • 2 tbsp lemon juice

  • 3 cloves garlic

  • 1 tbsp red wine vinegar

  • 1 tsp herbs (oregano, basil, etc)

  • salt to taste, vinegar, and herbs.

Directions

  • To start, clean the mushrooms using a damp cloth. Remove the stems and cut mushrooms into medium-sized pieces.
  • In a container, combine mushrooms with olive oil, water, lemon juice, vinegar, and herbs. Marinade for at least 1 hour or overnight for best results.
  • Put all the ingredients in a sauce pan and bring to a low boil. Allow it to cook for 5 min.
  • Remove mushrooms and put it on a dish and allow to cool. 
  • Best served on an antipasto platter with other ingredients such as olives, cubes of cheese, artichoke hearts, or thin slices of meat.
