Italian-Style Mushroom Tart

Ingredients

  • 2 tbsp butter

  • 3 cloves garlic, minced

  • 1/2 cup (64 g) onion, sliced

  • 8 oz (200 g) mushroom quartered

  • 2 cups (256 g) spinach, chopped

  • 6 eggs

  • 1/2 tsp salt

  • 1 dash pepper

  • 1/2 cup (64 g) grated Parmesan cheese

Directions

  • To start, preheat the oven broiler.
  • In an ovenproof pan, heat the butter over medium heat.
  • Add the garlic, mushroom and onion, and cook for 5 min. Stir in the spinach and let it cook for another 3 min.
  • In a mixing bowl, whisk in the eggs with a pinch of salt and pepper.
  • Add the eggs to the mushroom mixture, make sure to swirl the pan to have an even layer.
  • Over a low heat, let it cook for 5 min until cooked through.
  • Spread the cheese on top of the mushroom tart, and let it cook for 4 to 5 min in the oven.
  • Serve the mushroom tart warm.
