3 cups (384 g) mushrooms, chopped
1/2 cup (64 g) all-purpose flour
1/2 cup (64 g) seasoned dry breadcrumb
1/3 cup (40 g) chopped onion
1/4 cup (32 g) parsley, chopped
1/4 tsp pepper
3 tbsp vegetable oil
1 medium-sized jalapeno pepper, chopped

- Preheat oven to 350 F (176 C).
- In a mixing bowl, combine the eggs, mushrooms, flour, bread crumbs, jalapeno, onion, parsley, and pepper.
- Heat the oil in a pan over medium heat.
- Form a cake with a 1/4 cup (32 g) of the mixture and place it in the pan. Repeat with the remaining mushroom mixture.
- Cook each side for 3 – 5 minutes.
- Drain cakes and cook remaining mixture.
