16 oz (400 g) mushrooms, chopped
8 oz (200 g) cream cheese
1/3 cup (80 ml) chicken stock
1/4 cup (32 g) scallion, chopped
4 tbsp butter
2 cloves grlic
- Heat 2 tbsp of butter in a pan over medium heat.
- Cook mushrooms, scallions and garlic for 5 minutes.
- Mix in the chicken stock. Cook over high heat until the liquid is reduced to half volume.
- Using a blender, pulse 2 tbsp of butter and cream cheese until smooth.
- Add in the mushroom mixture and blend until smooth.
- Add a pinch of salt and pepper. Mix well.
- Serve with bread or vegetables.
