To start with, the centerpiece of any quiche is the cheese, which in this case is shredded Swiss. This type of cheese is not only low in fat, but also relatively high in protein and calcium. If you don’t have any, switch it up for mild cheddar, Colby jack, shredded Parmesan, or mozzarella. Keep in mind that each cheese tastes different, and some will melt and crisp quicker.

Onto the second key ingredient: the mushrooms. This fungus is very nutritious and has a ton of health benefits. Still, you can use the canned type, fresh mushrooms, or change them up entirely. Other vegetables that work instead include asparagus, spinach, and eggplant.

The onions aren’t really necessary, but this vegetable is very good for your gut health. Other options are red onions, chives, leeks, or green beans.

When it comes to milk, it’s best to use it if you can, but other alternatives can work. You can try using cream, half and half, coconut milk, and plain yogurt.

Finally, for simplicity, get one of those pre-made piecrusts. These are tasty and easy to work with. You can make your own if you like to, but it will take more time and effort.

Mushroom Quiche

  • 1 (9 in pie) unbaked 9-inch pie crust

  • 1/2 cup (64 g) shredded Swiss cheese

  • 1/2 onion, minced

  • 1 can 4.5 oz (approx 112 g) sliced mushrooms, drained

  • 3 egg yolks

  • 2 egg whites

  • 2 tbsp all-purpose flour

  • 2 tbsp milk

  • 1/2 tsp chopped fresh thyme

  • salt and pepper to taste


  • To start, preheat the oven to 350 F (180 C). Grease a quiche dish with some oil.
  • Layer the cheese, mushrooms, and onion on the prepared baking dish.
  • Combine egg whites, milk, egg yolks, and flour. Stir well, and pour the mixture on the layered cheese and mushrooms.
  • Spread the mixture evenly in the prepared baking dish, and add thyme, salt and pepper.
  • Bake for about 30 min or until the top is golden brown.
  • Serve warm, enjoy.
