For this recipe, you will only need angel hair pasta, shiitake mushrooms, garlic, onions, white wine, olive oil, chicken broth, whipping cream, salt, pepper, Parmesan cheese, and fresh parsley.
If you want to replace some of these, you absolutely can! Try using spaghetti, penne pasta, garlic powder, chives, apple juice, butter, vegetable broth, half and half, Italian mix cheese, and herbs. For a dairy-free recipe, use coconut milk and vegan cheese, or skip the cheese altogether.
To speed things up, start by boiling your pasta, making sure to get it al dente. In the meantime, you can stir-fry all the vegetables, adding the broth and wine as you cook them.
This process may take a few minutes, because the idea is for the liquid to evaporate. Once you have half the liquid remaining, add the seasoning. You can add more herbs and spices if you would like.

Pasta with Shiitake
6 oz. (170 g) angel hair pasta
6 oz. (170 g) sliced shiitake mushrooms
1 clove garlic, diced
1/2 onion, diced
1/2 cup (118 ml) heavy whipping cream
1/4 cup (59 ml) white wine
1/4 cup (59 ml) chicken broth
2 tbsps grated Parmesan cheese
2 tbsps diced parsley
1 tbsp olive oil
ground black pepper
- Boil pasta in water with salt for 10 minutes. Remove liquids and set aside.
- Stir fry onions and garlic until they’re fragrant.
- Add the mushrooms, wine and broth.
- Cook mixture until half the liquid has evaporated.
- Add salt and pepper to taste.
- Ladle sauce to the pasta and stir until they’re evenly coated.
- Garnish with parsley and Parmesan.
- Serve and enjoy!
