To make this meal more flavorful, consider adding more spices and other ingredients. You can add vegetables like onions, zucchini, and yellow squash. You can also add other seasonings, such as cumin, chili powder, or turmeric.

Directions
- Preheat oven to 350 F (176 F).
- Whisk the eggs in a mixing bowl.
- Add cheese, chives and potato. Mix well.
- Heat oil in a pan over medium heat.
- Cook egg mixture.
- Lay the mushrooms and tomato slices over the mixture.
- Add salt and pepper.
- Cook for 12 – 15 minutes.
