You can replace some of these ingredients with butter, chives, dry white wine, potato flour, cream, vegetable stock, and cream cheese.
Start preparing your meal by cooking the mushrooms, onions, salt, and pepper for a few minutes. Add the sherry and keep cooking, then add the flour. Mix well, making sure there are no clumps of flour.
Finally, add the milk, broth, and pierogis, cooking them until they start boiling. Finish off by adding the sour cream. Taste and add more spices if needed.

Potato Pierogis with Mushrooms
1 lb (450 g) frozen low-fat potato pierogis, thawed
2 cups (256 g) sliced mushrooms
2/3 cups (160 ml) low-fat milk
1/4 cup (60 ml) chicken broth
2 tbsp dry sherry
2 tbsp light sour cream
1 tbsp flour
1 tsp olive oil
1 onion, sliced
salt and pepper
- Heat oil in a pan over medium heat.
- Add the mushroom, onion and a pinch of salt and pepper. Cook for 5 minutes.
- Add in the sherry and cook for another 2 minutes.
- Add in the flour. Stir well.
- Add in the milk, broth, and pierogis. Bring to boil.
- Turn heat off and add the sour cream.
- Serve hot.
