To make this recipe, you will need olive oil, sliced mushrooms, onions, salt, pepper, dry sherry, flour, low-fat milk, chicken broth, one package of thawed low-fat potato pierogis, and sour cream.

You can replace some of these ingredients with butter, chives, dry white wine, potato flour, cream, vegetable stock, and cream cheese.

Ingredients

  • 2/3 cups (160 ml) low-fat milk

  • 1/4 cup (60 ml) chicken broth

  • 2 tbsp dry sherry

  • 2 tbsp light sour cream

  • 1 tbsp flour

  • 1 tsp olive oil

  • 1 onion, sliced

  • salt and pepper

Directions

  • Heat oil in a pan over medium heat.
  • Add the mushroom, onion and a pinch of salt and pepper. Cook for 5 minutes.
  • Add in the sherry and cook for another 2 minutes.
  • Add in the flour. Stir well.
  • Add in the milk, broth, and pierogis. Bring to boil.
  • Turn heat off and add the sour cream.
  • Serve hot.
