No need to panic over the cooking and ingredients, all you need is a few ingredients that you may already have, and a few minutes to cook.

If you know mushrooms, then you know that shiitake mushrooms add delicious tenderness and flavor. But did you know that they have multiple health benefits? It’s time to add them to your common list of ingredients.

However, if you can’t find shiitake, you can use any other mushrooms. Otherwise, we suggest you replace them with eggplant, sun-dried tomatoes, zucchini, or even tofu. You will get extra fiber, vitamins, and minerals from all of these options as well.

What about the potatoes? Well, this recipe uses Yukon Gold potatoes, but truly any kind works. We suggest you try russet, baby gold, fingerling, or even sweet potatoes. If you don’t want to add that much starch, consider swapping it then for butternut squash.

The rest of the ingredients add color and texture, but they are also very healthy. Red bell peppers are high in vitamin C and A, which help fight oxidative stress, reducing your chances of illness and cancer.

Shallots are also high in fiber and are also an antioxidant, so they help manage blood cholesterol levels and blood sugar. The kale, on the other hand, is a great source of magnesium and vitamin K, and it is often referred to as a “superfood”.

Finally, don’t skip the acorn squash if you can, as it is a very nutritious vegetable that gives you vitamin A, C, B vitamins, iron, magnesium, and potassium, among some.

If you don’t have these vegetables handy, don’t worry, as there are substitutes you can use. Some great additions to this dish include water chestnuts, corn, carrots, broccoli, and bok choy.

Shiitake and Potato Stir Fry

Ingredients

  • 3 tbsp olive oil

  • 2 tbsp butter

  • 1 lb (450 g) Yukon gold potatoes, diced

  • 1/2 lb ( 225 g) shiitake mushrooms, diced

  • 1 red bell pepper, diced

  • 1 small acorn squash, diced

  • 1 shallot, finely diced

  • 2 tbsp garlic powder

  • 1 pinch salt

  • 1 pinch ground black pepper

  • 1 cup (128 g) diced kale

  • 4 sprigs fresh sage

Directions

  • To start, heat the butter in a pan.
  • Stir fry the shallots, mushrooms, red pepper, potatoes, and squash for 3 min. Season with black pepper, salt and garlic powder.
  • Cook the vegetable mixture for 27 min. Stir occasionally every 3 to 5 mins.
  • Add the sage, and kale. Let the mixture cook for 3 more min.
  • Serve warm.
