Shiitake Miso Soup with Tofu
Ingredients
4 cups (960 ml) vegetable broth
4 shiitake mushrooms, thinly sliced
1/4 cup (32 g) miso paste
4 tsp soy sauce
1/3 cup (approx 40 g) diced firm tofu
2 green onions, trimmed and thinly sliced
Directions
- To start, combine soy sauce and miso paste in a regular bowl.
- Bring the vegetable broth to a boil in a large pot.
- Stir in the mushrooms and set the heat to its lowest level. Simmer for 5 min.
- Stir in the soy sauce mix and the tofu. Let it boil for 3 more min.
- Pour your soup into serving bowls, and top with green onions.
- Enjoy!
