As for the tofu, you probably know that it is a great source of protein, but it is also lean and contains many nutrients. These include calcium, iron, manganese, and phosphorus. It also contains B vitamins, which are pretty hard to get when you don’t consume meat products.

Can I replace any ingredients?

You can use the recipe as is, but it is a very flexible dish too. If you can’t find shiitake mushrooms any other mushrooms will do, and they still are very healthy.

As for green onions, we suggest you use chives, red onions, or even yellow onions. If these aren’t your favorite, use other vegetables, including water chestnuts, spinach, bok choy, or asparagus.

While the tofu is key for protein, it isn’t your only option. Other vegetarian sources of protein that work well in this dish include tempeh, seitan, or chickpeas. If you do want to include meat, white fish is a great choice, as is shrimp or chicken.

Finally, soy sauce is essential for umami and color, but you can choose other ingredients. Good replacements are tamari sauce, hoisin, liquid aminos, or mushroom broth. And if you don’t find any miso paste, use that same vegetable broth, or add tahini paste for protein and color.

Shiitake Miso Soup with Tofu

  • 4 cups (960 ml) vegetable broth

  • 4 shiitake mushrooms, thinly sliced

  • 1/4 cup (32 g) miso paste

  • 4 tsp soy sauce

  • 1/3 cup (approx 40 g) diced firm tofu

  • 2 green onions, trimmed and thinly sliced


  • To start, combine soy sauce and miso paste in a regular bowl.
  • Bring the vegetable broth to a boil in a large pot.
  • Stir in the mushrooms and set the heat to its lowest level. Simmer for 5 min.
  • Stir in the soy sauce mix and the tofu. Let it boil for 3 more min.
  • Pour your soup into serving bowls, and top with green onions.
  • Enjoy!
