Ingredients

  • 2 tbsp olive oil, divided

  • 1 lb (450 g) asparagus, trimmed

  • Kosher salt

  • freshly ground pepper

  • 1 pint morel or maitake mushrooms

  • Gribiche dressing

Directions

  • Using a large skillet, heat 1 tbsp oil over medium-high heat.
  • Cook asparagus for about 4 minutes. Turn occasionally, until all sides are lightly browned and crisp-tender.
  • Then, arrange asparagus on a platter using tongs.
  • In the same skillet, heat the remaining 1 tbsp olive oil.
  • Cook morels. Toss every now and then for about 5 minutes, until browned and crisp.
  • Season the morels with salt and pepper. Spoon over asparagus.
  • Then, spoon dressing over the asparagus with morels to your liking.
  • Serve and enjoy!
