A healthy casserole for a heart-warming meal! 

This dish is so good because it combines the best of both worlds, a homemade meal that remains nutritious and is not too dense. Because of this, you can pretty much add or change anything you want without disrupting the dish too much.

First, you will want to gather the ingredients. You will need wild rice, pearl barley, brown rice, oil, onions, garlic, butter, mushrooms, broth, dry thyme, dry oregano, salt, and pepper.

You can substitute some of these foods if you need to. Try using other ingredients, such as quinoa, bulgur wheat, white rice, Arborio rice, regular barley, green onions, leeks, bell peppers, carrots, vegetable stock, Italian herb mix, and parsley.

Be sure to preheat your oven first so it is ready to go with plenty of time. Mix the wild rice, brown rice, and barley in a bowl. In the meantime, start browning your onion so it softens, then add the garlic, and finally, the rice mix.

Separately, you will want to melt the butter in a skillet, cook the mushrooms in the butter, then add them to the saucepan, and finally combine the broth, herbs, salt, and pepper. Cook it all until it begins to boil.

You will want to simmer everything for few minutes. Then transfer the pot contents to an oven dish and bake for one hour.

Remember that the baking time may vary depending on what ingredients and amounts you use, so you will want to check your casserole throughout the baking process.

Mushroom Casserole

Ingredients

  • 1/2 lb (225 g) mushroom, sliced

  • 3 1/2 cup (840 ml) broth

  • 1/2 cup (64 g) wild rice

  • 1/2 cup (64 g) pearl barley

  • 1/2 cup (64 g) brown rice

  • 1/4 cup (60 ml) oil

  • 1 tsp crushed dried thyme

  • 1/2 tsp crushed dried oregano

  • 4 cloves garlic, chopped

  • 4 tbsp butter

  • 1 onion, sliced

  • salt

  • pepper

Directions

  • Preheat oven to 350 F (176 C).
  • In a mixing bowl, mix the wild rice, brown rice and barley.
  • Heat the oil in an ovenproof pot over medium heat.
  • Cook the garlic and onion for 5 minutes.
  • Stir in the rice mix. Cook for 2 minutes.
  • Heat butter in a small skillet over medium heat. Cook mushrooms in it for 2 minutes.
  • Add the buttered mushrooms into the saucepan containing the broth with herbs.
  • Add a pinch of salt and pepper.
  • Bring the mixture to boil.
  • Combine the broth and rice in your ovenproof pot.
  • Put lid on and cook in the oven for 60 minutes.
  • Serve hot.
