As with other mushrooms, morels are very nutritious, and they contain vitamins and minerals. Some of these include iron, copper, manganese, phosphorus, zinc, vitamin D, folate, potassium, magnesium, and calcium.

Now that you know why use morels, let’s focus on the rest of the ingredients. To prepare this meal, you will need butter, bacon, eggs, Hollandaise sauce, asparagus, garlic, and olive oil.

You can substitute some of these ingredients with things like ham, Bernaise sauce, garlic powder, onions, green beans, and vegetable oil.

When you begin cooking, start by frying the morels, and separately cook the asparagus in the method you prefer.

In the meantime, fry up the bacon, and poach your eggs. You can prepare your Hollandaise sauce, or buy a commercial one. Either way, make sure it tastes good, or adjust to your liking.

To arrange your dish, go with the asparagus at the bottom, then the morels, add the bacon, the poached eggs, and finish off by pouring the sauce on top.

You can make this dish a little healthier by skipping the Hollandaise and using a lighter dressing or sauce instead. Some people skip the sauce altogether.

Stir-Fried Asparagus and Morels in Hollandaise Sauce

Ingredients

  • 10 – 15 fresh morels

  • 1 – 2 lbs (450g – 900g) fresh asparagus tips

  • 1 lb (450 g) butter

  • 1 lb (450 g) bacon

  • 7 oz (175 g) Hollandaise Sauce

  • 1/4 cup (32 g) butter

  • 4 eggs, poached

  • 3 garlic cloves, minced

  • 2 tbsp extra virgin olive oil

Directions

  • Fry the morel mushrooms in a generous amount of butter over medium-high heat.
  • Add in salt and pepper.
  • Melt butter in a skillet over medium-high heat.
  • Mix in olive oil, salt and pepper.
  • Cook garlic in the butter for 1 minute.
  • Add asparagus and cook for 10 minutes. Turn asparagus frequently to ensure they are evenly cooked.
  • Fry up the bacon strips.
  • Poach the eggs.
  • Arrange on a plate in this order: asparagus tips, morels, bacon slices, 2 poached eggs, then cover with generous amount of Hollandaise sauce.
