To make this tasty meal, you will need peanut oil, onions, garlic, chicken, soy sauce, ginger, mint, shiitake mushrooms, green onions, Thai red chili, rice vinegar, brown sugar, fish sauce, and jasmine rice.
If you can’t find one or more of these, you can substitute them easily. Try using other things, like sesame oil, scallions, onion powder, garlic powder, pork or turkey, tamari sauce, ginger powder, parsley, red pepper flakes, white vinegar, honey, oyster sauce, and rice noodles.
Before you start cooking, be sure to preheat your oven to 350 degrees F. Mix the sauce ingredients as you wait, and cook the chicken, onions, and garlic in a skillet as well. You can then add the rest of the ingredients and cook for another 5-8 minutes.
Finish off by stirring in the sweet sauce and serve over your white rice!

Oriental Chicken And Shiitake
Ingredients
1 1/2 lbs (675 g) chicken breasts, skinless, boneless, cubed
3 tbsp peanut oil
1 onion, cut into slivers
6 garlic cloves, minced
2 tbsp soy sauce
2 tbsp chopped gingerroot
2 tbsp chopped mint leaves
8 shiitake mushrooms, stemmed, sliced
5 green onions, chopped
thai red chili pepper, slivered
2 tbsp rice vinegar
1 tsp brown sugar
2 tbsp fish sauce
steamed jasmine rice
Directions
- Preheat oven to 350 F (176 C).
- Make the sauce by whisking vinegar, fish sauce and brown sugar in a mixing bowl.
- Heat oil in a skillet over medium heat.
- Cook chicken, garlic, and onion for 4 minutes.
- Mix in the mushrooms, soy sauce, ginger, mint, green onions, and chillies. Cook for 5 to 8 minutes.
- Stir in the sauce.
- Serve with rice.
