To prepare this dish, you will need peanut oil, onions, garlic, chicken, soy sauce, ginger, mint, shiitake mushrooms, green onions, Thai red chili pepper, rice vinegar, brown sugar, fish sauce, and jasmine rice.

You can switch some of these ingredients with other foods. Try using vegetable oil, sesame oil, scallions, garlic powder, turkey, pork, beef strips, tamari sauce, minced ginger, parsley, red pepper flakes, apple cider vinegar, honey, oyster sauce, and rice noodles.

Start the cooking process by turning on the oven to 350 degrees F. You will want to make the sauce in a bowl as you wait. Add the vinegar, fish sauce, and brown sugar. You can cook the chicken, onion, and garlic in the meantime. You can then add the soy sauce, ginger, mint, mushrooms, chilies, and onions.

Finish off by adding the sauce. Allow the mix to thicken by simmering over low heat. If you want to add more crunch to this meal, consider adding sesame seeds or peanuts.

To make the dish both vegetarian and vegan, switch the chicken for tofu, and skip the fish sauce. You can also make it more filling by using more vegetables, such as red bell peppers, water chestnuts, carrots, broccoli, and pea snaps.

Serve your Thai chicken pan with shiitake over rice or rice noodles, and sprinkle some fresh mint and parsley on top. For those that like heat, add a dash of sriracha sauce to finish everything off.
