If you need to, substituting some of these foods is not a problem. Try using olive oil, broccoli, peas, leeks, potatoes, garlic powder, oregano, Italian seasoning mix, vegetable broth, farfalle pasta, beans, fish, shrimp, cabbage, and pecorino.
This soup is full of nutrients, including vitamins, minerals, protein, and fiber. You can add more vegetables if you like, such as spinach, bell peppers, corn, tomatoes, and sweet potatoes. For a vegetarian option, try using beans like cannellini, black-eyed peas, and chickpeas.

8 oz. (200 g) sliced mushrooms
6 cups (approx. 1.4 L) low sodium chicken broth
2 cups (256 g) baby spinach leaves, loosely packed
2 cups (256 g) cooked chicken, chopped
1/4 cup carrot, chopped
1 stalk celery, chopped
1 medium onion, chopped
2 tbsp butter
1 tbsp garlic, minced
1 tsp Mrs. Dash seasoning mix
1/2 tsp thyme, minced
parmesan cheese grated
Directions
- Melt butter in a large pot over medium heat.
- Cook carrots, onions, garlic, celery for 9 minutes.
- Mix in the mushrooms, thyme, and Mrs. Dash seasoning. Cook for 8 minutes.
- Mix in the broth and bring to boil.
- Add in the tortellini and chicken.
- Cook for 8 to 10 minutes.
- Add in the spinach and cook for another 6 minutes.
- Season with some salt and pepper.
- Serve hot.
