1/2 lb (226 g) mushroom, cleaned and quartered
1 (14 oz) can diced tomatoes, drained
1 medium red bell pepper, cored, seeded and strips
1 medium yellow bell pepper
3 tbsp olive oil
2 tbsp balsamic vinegar
1 1/2 tbsp honey
1 tbsp rosemary
1 tsp salt
ground black pepper
- Preheat oven to 425 F (223 C).
- Using a baking dish, combine the mushroom. tomato, bell pepper, vinegar, olive oil, rosemary, salt, and pepper.
- Add in the chicken breasts on top of the mixture and then press them down.
- Sprinkle salt and pepper.
