You can substitute some of these foods with things like turkey, pork, tofu, beef, shrimp, asparagus, water chestnuts, carrots, zucchini, red wine vinegar, oregano, and maple syrup. If you want to make this meal vegan, swap the honey for something like brown sugar or agave syrup. When using tofu, you will want to reduce the baking time, or your tofu may burn.

  • 4 chicken breasts

  • 1/2 lb (226 g) mushroom, cleaned and quartered

  • 1 (14 oz) can diced tomatoes, drained

  • 1 medium red bell pepper, cored, seeded and strips

  • 1 medium yellow bell pepper

  • 3 tbsp olive oil

  • 2 tbsp balsamic vinegar

  • 1 1/2 tbsp honey

  • 1 tbsp rosemary

  • 1 tsp salt

  • ground black pepper

  • Preheat oven to 425 F (223 C).
  • Using a baking dish, combine the mushroom. tomato, bell pepper, vinegar, olive oil, rosemary, salt, and pepper.
  • Add in the chicken breasts on top of the mixture and then press them down.
  • Sprinkle salt and pepper.
  • Add in the honey.
  • Put dish in oven and cook for an hour.
  • Serve warm.
