Chicken Cremini with Avocado
4 halves of skinless, boneless chicken cut into bite size
2 cups (256 g) thinly sliced cremini mushrooms, do not include stems
2 cups (256 g) snow peas
1/2 cup (118 ml) chicken broth
1/4 cup (59 ml) soy sauce
4 bunch green onions, sliced into 1 inch pieces
2 large ripe avocados, peeled, pitted, cut into big chunks.
1 clove garlic, diced
1 tbsp cornstarch
1 tbsp vegetable oil
- Using a bowl, mix the cornstarch, broth, garlic and soy sauce until smooth.
- Stir fry the chicken in a hot wok for 6 mins.
- Set the chicken aside.
- Stir fry the peas for 4 minutes, then add the mushrooms and onions.
- Cook the mixture for another 5 mins then drain any liquids.
- Return the chicken back into the pan. Cook on medium heat.
- Pour in the sauce and the avocados.
- Cook for 3 minutes until bubbly and then stir.
